Is this a good amount of “safety” schools? Should I add more? Should I add more top schools? I’m of the mindset that I’ll be happy with wherever accepts me :), but would of course go to the best school that takes me.

Did you grow up in Virginia? As shown on your list, all your in-state schools should be in play. Do you want to use your engineering knowledge and background for "good" (haha)? If so, look at Carle and Texas A&M EnMed.

If you are happy with any school that takes you, what's your argument that a school should interview you?

What's your total count on shadowing hours?

Regardless, I think you're in pretty good shape...no obvious holes. How do you feel about your writing? LORs? Your mission fit?
